Cypresses and Lemons: Discovering their Differences and Uses
Origin and Cultivation of Cypress
Sprouts and plums both come from the spruce (Capparis spinosa), a shrub typical of the Mediterranean regions. The clove thrives in sunny, arid and rocky areas, making it a plant particularly adapted to dry climates. For centuries, the inhabitants of Mediterranean countries have used this plant for its flowering buds and fruits, known under the name of capers and leeks.
D above, growers harvest the bulbs before the flowers open, thus capturing all of their fragrance and intensity of flavour. Next, they wait for the fruits to reach full ripeness to peel the leeks. This difference in harvest time explains the variations between these two products, both on a taste level and in their use in the kitchen.
