Akbari Pistachio:

Peeled Pistachio Kernels and Color Grades

Peeled pistachio kernels (or green pistachio kernels) are pistachios that undergo a precise peeling process to remove their thin purple outer skin, revealing the bright green core. This enhances the productâ??s appearance and quality, making it ideal for export and use in various culinary and confectionery applications. These vibrant green kernels are popular in products like ice cream, chocolate, desserts, and specialty dishes.

Color Grades of Peeled Pistachio Kernels:

Peeled pistachio kernels are classified by color intensity, as follows:

Super Green Grade (Grade S or Super Green): This highest grade comprises the greenest kernels, suitable for products needing an intense green color, such as premium pistachio powder and high-quality desserts.

Green Grade (Grade A): Kernels in this grade are slightly lighter than Super Green but still vibrant. Grade A kernels are ideal for products where a visually appealing green hue is important.

Semi-Green Grade (Grade B): This grade has moderately green kernels suitable for various uses, including baked goods and food mixes.

Yellowish-Green Grade (Grade C): These kernels have a yellowish-green tint, lighter and less vibrant than higher grades, and are appropriate for applications like certain confectioneries, ice creams, and baked goods where a strong green color isnâ??t required.

Yellow Grade (Grade D): This grade includes yellow kernels with minimal or no green tint, typically used in products where color is not a priority. Grade D is a cost-effective choice for baking and general culinary use.

Light Yellow Grade (Grade F): This grade consists of split (or halved) kernels from grades A and B, making it economical and practical for applications where whole kernels are not essential, such as in baked goods and food products primarily needing the taste and nutritional benefits of pistachios.

Applications: These grading standards enable producers and buyers to select the most suitable grade, especially important in exports and the food industry, to ensure the desired quality and appearance in final products.
