Early Harvest Olive Oil Varieties
Early harvest refers to the period when olives are harvested in September-October while they are still green. During this period, olives are extremely rich in terms of nutritional value since they have just started to ripen. Early harvest olives, which also offer very strong properties in terms of antioxidant substances and aromatic components, are turned into olive oil with the cold pressing method in order to preserve all these properties. Since olives are not exposed to high heat treatment, they continue to preserve all the properties they have in their natural state in early harvest olive oil.
