Entire fruits are boiled with sugar to make a thick syrup for desserts and sweets. Unopened flower buds are cooked and eaten as a vegetable. The reddish-purple juice of species with red pulp is used as a natural food coloring. Dragon fruit may look exotic, but its flavors are similar to other fruits. Its taste has been described as a slightly sweet cross between a kiwi and a pear.
