Saffron is used as an spice extensively in Persian, European, North African, Indian, Spanish, Turkish, Moroccan, and Asian cuisine. It's aroma is like honey with grassy, hay-like and metallic notes. Saffron's taste is that of hay, but with hints of bitter. Even though saffron threads are red, it gives a luminous yellow-oranging coloring to items it is soaked with.
