The Portuguese word jgara and the Sanskrit word sarkara (gritty substance, sugar)are the origin of the word jaggery. Natural Jaggery is a traditional Indian sweetener made from sugarcane. Jaggery production currently accounts for 25% of India's cane production. Rural residents may easily obtain and consume jaggery, which is nutrient-dense. It is produced at the farmer's units and takes less machinery to produce than white sugar. Most of the percent of the jaggery produced worldwide is manufactured in India. The potential of jaggery to satisfy future sweetener needs appears to be bright.
