The Cashew tree (Anacardium Occidentale) is a tropical evergreen native to the Americas but is now widely cultivated in Asia and Africa. Cashew in its natural form is a soft, white, meaty kernel contained within the hard shells of kidney shaped, raw cashew nuts. Cashew is consumed all over the world as a snack or used as a food ingredient. Every year, the world eats more than 600,000 metric tons of cashew. And fortunately, it’s a very healthy food. Cashew nuts are among the most nutritious nuts in the world. Cashew Nuts are low in fat, have zero cholesterol, are high in protein, and include a large amount of important vitamins and minerals.
Every single cashew nut comes from its own cashew apple, which are grown on cashew trees and thrive in tropical climates. The nuts are then collected, dried, shelled, peeled, graded, and roasted.
Raw Cashew Nuts( Known as RCN, Cashew nut Shell-on, Cashew nut in a shell, or Cashew nuts) is the name of the cashew apple sub-nut. Although a cashew apple contains 90% of the fruit, only 10% is a Raw Cashew nut.
A single Raw Cashew Nut has 30% cashew kernels and 70% cashew shell. Normally 1 ton of raw cashew nut can process 250-300 kg of the cashew kernels and 700-750 kg of the cashew shells.
The RCN has to be processed to separate the shell from the cashew kernel, which are used in cooking and confectionary making.

The cashew tree is a tropical evergreen tree that produces the cashew nut and the cashew apple. It can grow as high as 14 metres (46 ft), with the exception of the dwarf cashew, which can grow up to 6 metres (20 ft).

When procuring RCN we ascertain the quality of the crop based on its quality measures such as its Kernel Out-Turn Ratio (KOR), Moisture content, and Nut Count. A high KOR fetches higher value, whereas a lower nut count means the crop has bigger nuts which attract a better price.

Raw Cashew Nuts from Ghana are high-quality, naturally harvested nuts grown primarily in the Brong-Ahafo, Volta, Eastern, Northern, and Western regions. Ghanaian raw cashew nuts are highly regarded for their good kernel yield, consistent nut size, and low moisture content, making them suitable for processing into cashew kernels.
These nuts are uncooked and unprocessed, exported in their raw shell form, and typically intended for industrial or semi-industrial processing into edible kernels.
