Introduced to the country during the gold rush of the 1800’s by Chinese miners, every October and November the side of the mountains are a mass of vivid purple thyme flowers and the air is filled with the amazing fragrance given off by this herb. This is the time of year when our bees produce Wild Thyme Honey.
