Ceylon cinnamon, also known as "True Cinnamon", is a premium spice grown mainly in Sri Lanka. It is prized for its sweet aroma, delicate flavor, and low coumarin content, making it a healthier alternative to Cassia cinnamon. The sticks are made from the inner bark of the cinnamon tree, rolled into tight quills and sun-dried.
Common Grades of Ceylon Cinnamon Sticks:
Alba < 6 mm - Finest grade, ultra-thin and delicate quills. Highest quality and price.
C5 Special 6â??8 mm (tighter) - A superior sub-grade of C5, with very tight, smooth, and uniform quills. Excellent aroma and appearance.
C5 6â??10 mm - Very thin, smooth sticks with a light color. Common for premium exports.
C4 10â??13 mm - Slightly thicker than C5, still high quality and good aroma. Popular export grade.
M5 13â??16 mm - Medium-sized sticks, moderate appearance, good for value markets.
M4 16â??18 mm - Thicker sticks, slightly rougher texture, used for bulk and food processing.
H1 18â??22 mm - Hollow quills from mature bark. Less attractive, often used in grinding.
H2 > 22 mm - Coarse and thick. Mostly used for powder production or industrial use.
