Soka crab is a term used to refer to a crab that has just molted, so its entire body is still soft, including its legs and claws. In this condition, the crab can be eaten in its entirety without the need for peeling.
Soka crabs generally come from the mangrove crab species (Scylla spp.), especially Scylla serrata. However, the term "soft-shell crab" in an international context can also refer to other species such as the blue crab.
