Disodium succinate is an organic substance with a chemical formula of C4H4Na2O4 nH2O (n=6 or 0), referred to as WSA, commonly known as scallop, and has two forms, namely crystalline disodium succinate and anhydrous disodium succinate. Its hexahydrate is crystalline particles, anhydrous is crystalline powder, colorless to white, odorless, umami taste, taste threshold 0.03%, stable in air, and easily soluble in water. Disodium succinate is an organic acid food flavoring agent approved by my country. It is often used in conjunction with sodium glutamate, and the general usage is about 10% of sodium glutamate.
