Sugarcane Jaggery - solid form - is a natural sweetener widely used in baking industry as replacement to white sugar and used as an ingredient in some South India dishes. Sugarcane Jaggery is prepared by extracting the juice from cane and boiled for more than an hour to thicken. The resulting thick syrup is then poured into wooden or SS die and allowed to cool down in order to get the desired shape. Jaggery is used as an ingredient in sweet and savoury dishes in the cuisines of India, Pakistan, Bangladesh, Nepal, Sri Lanka, Afghanistan, Iran.
Just 20 grams of Jaggery contains 38 calories and has 9.8 gram of carbohydrates, 9.7 gram of sugar, 0.01 gram of protein, choline, betaine, Vitamin B12, B6, folate, calcium, iron, phosphorus and magnesium. It has no traces of any kind of fat so one can readily add it to their diet without worrying about excessive fat intake. Since Jaggery contains sugar content similar to that of white sugar diabetic patients should avoid overconsumption at any point in time.
