Mahlab is the small pit of a wild sour cherry. The ground powder is more the consistency of a fine meal with a bitter flavor and an almond/cherry aftertaste. It is well worth experimenting with this unfamiliar but intriguing flavoring. One or two spoonful added to a rich pastry for fresh fruit flans gives them a subtle note.
