Chourio is a Portuguese charcuterie product, made from minced pork and seasoned with salt, garlic, pepper and other spices. It is stuffed into a natural casing, usually made of pig intestine, and smoked or cured. Chorizo is a very versatile food and can be eaten raw, fried, roasted or grilled. It is an essential ingredient in many traditional Portuguese dishes, such as feijoada, cozido portuguesa and arroz de chouriao.
